1 46-oz. can pineapple juice
2 1-liter bottles ginger ale or other carbonated beverage
2 6-oz. cans frozen orange juice, thawed
½ teaspoon peppermint extract
Maraschino cherries (drained on paper towels)
2 trays ginger ale ice cubes
Chill pineapple juice and ginger ale or other carbonated beverage. Pour additional ginger ale into 2 ice cube trays, placing a maraschino cherry in each cube. Freeze.
At serving time, combine pineapple juice and concentrated orange juice in punch bowl. Add peppermint extract. Slowly pour in ginger ale or carbonated beverage. Add decorated ice cubes.
Yield: About 30 punch cup servings.
